Nourish Wellness November 19 · Eggs, they’re a great source of protein and we normally have them in the fridge. This quiche is so easy and you can adapt it to whatever you have on hand. You can have if for breakfast, lunch, or dinner. The picture is a leftover salmon and spinach, but other ideas are chicken and mushroom or broccoli, veggie, turkey asparagus, chicken sausage and peppers. Main ingredients: 6 eggs 3/4 cup of milk 1/4 cup chopped onion 1/2 cup chopped celery 3/4 cup shredded cheese Salt, pepper, or other spices Add-ins: Any veggie or leftover chicken, salmon, or your favorite chicken/turkey sausage. Get creative! Preheat oven to 375. I begin by sautéing the onion and celery in about a tablespoon of olive or avocado oil. You can add your other veggies here. Cook until tender. In another bowl whisk eggs and milk. Spray a pie plate with cooking spray and add the onions/veggies, chicken or other protein, and top with cheese. Pour egg mixture on top and season with salt and pepper. Cook until until golden, usually around 40 minutes.
