Can you tell that I like a good breakfast with the right carbs, protein, and fats? This is a sweet potato, spinach, turkey, egg bake. Here’s what I used:
1 lb ground organic turkey
1 sweet potato
1-2 cups of organic spinach
6 organic eggs
1 1/2 cups organic lactose free milk
1/2 cup shredded cheese of choice
1/4 fresh shredded parmesan
1 tsp chili powder
1/2 teaspoon garlic powder
1 tbsp coconut oil
pepper
Preheat oven and spray a 9x9 baking dish. Thinly slice the sweet potato, about 1/4 inch and layer on the bottom of baking dish. Brown ground turkey using the tbsp of coconut oil. Add the garlic and chili powder. Drain and layer on top of sweet potato. Add the spinach on top of turkey. Mix the egg and milk. Layer the 1/2 cup of cheese on the spinach and pour in the egg mixture. Season with pepper and parmesan. Bake for about 40-45 minutes. Let sit for about 10 minutes and serve.
