Nourish Wellness November 28 at 1:09 PM · Got turkey? I do . If you made the pesto pasta we posted previously, you might have some pesto left. Grab your whole grain bread, spinach, provolone or mozzarella, and some turkey and you have your next meal. Option to make a colorful side salad with homemade dressing. I don’t have a panini maker so mine was more like a grilled spinach turkey sandwich. Spread the pesto on the inside of your bread slices. Remember to use a pesto that has few ingredients and the main ones should be olive oil and basil. Also remember to watch your portions, pesto is easy to over consume because of the high fat content (even though they are the good fats.) Layer your sandwich ingredients and spray the outside of the bread with olive or avocado cooking spray. Cook like a grilled cheese sandwich. I usually always have romaine lettuce and some kind of bag salad with kale, cabbage, and other veggies. So after cutting my romaine, I added some kale/cabbage mix, some sweet peppers, and tomatoes. I also had some leftover homemade croutons and used my new favorite homemade Italian dressing. (If you would like the recipe head to the Nourish Wellness Facebook page.) Split the sandwich and now you have lunch or dinner for two. Not in the mood for a sandwich, add a little turkey to your salad.
