Brainy Breakfasts

Honey Berry Oatmeal! Berries and breakfast, one of my favorites. This recipe is easy and has something for everyone. Mix: Dry 2 cups oats 1 tsp cinnamon 1 tsp of baking powder 1/4 cup cane brown sugar or coconut sugar Mix : Wet 2 cups of milk of choice (I use almond) 2 eggs 2 tsp vanilla 3 tbsp honey 1 1/2 tbsp melted coconut oil (if you don’t have you can use butter) Add 1 cup of frozen organic mixed berries to a 9x11 baking pan and cover evenly with dry mixture. Pour the wet on and add another cup or 2 of berries. You can also add chopped nuts. Bake at 350 for 35 minutes. Can top with additional honey or maple syrup. Also great the second and third day!
