Nourish Wellness November 6, 2020 · Store bought muffins may seem like they could be a healthy choice especially if they are sporting some blueberries. Unfortunately they might even be worse than donuts. They are extremely high in sugar and believe it or not, sodium, along with a lot of preservatives that I can’t pronounce. Homemade muffins any way are a great alternative. Here is a great recipe for Greek Yogurt Banana Oat Muffins from Runningwithspoons.com. 1 cup (225 g) plain Greek organic yogurt 2 medium ripe bananas (200 g or 1 cup mashed) 2 large eggs 2 cups (160 g) rolled oats (old fashioned or quick) 1/4 cup (50 g) brown or coconut sugar 1 1/2 tsp baking powder 1/2 tsp baking soda 1/2 cup (85 g) dark chocolate chips, mini or regular Heat oven to 400 and line or spray your muffin tin. This is the easy part. Put everything in a blender or food processor (except chocolate chips) and blend until oats are broken down. Sometimes I blend the oats finely first then add the rest of the ingredients. Add chips and pour into your muffin tin. Bake for about 15-20 minutes. Makes 12. See Less
