You can even add some whole grain bread and a bit of cheese for a great lunch! 2 cups cooked shredded no hormone chicken (Rotisserie is easy ) ¼ cup plain organic Greek Yogurt ¼ cup avocado mayonnaise 3 Tbsp finely chopped red onions (can adjust according to your taste) 2 teaspoons lemon juice 1 jalapeño pepper diced 1 avocado diced romaine hearts Salt, pepper, red pepper flakes to taste Instructions Add chicken, yogurt, mayo, onion, pepper, and lemon juice to a bowl and mix well to combine. Season with salt and pepper, to taste. Stir in avocado. Serve in cold, crisp lettuce cups. Feel free to get creative and add other veggies. Recipe was adapted from Tastes Better From Scratch. Enjoy!
