Nourish Wellness November 12 · Healthy Carrot Cake Oatmeal Breakfast Cookie Sometimes we need a mid-morning snack or maybe we’re in a rush and have to eat on the fly. Kids are also usually game for something we call a cookie. These breakfast cookies are packed with the right carbohydrates, fats, and yes even protein. 1 cup oats gluten-free if necessary) ¾ cup whole wheat or gluten-free 1 ½ tsp baking powder 1 ½ tsp ground cinnamon ¼ tsp ground nutmeg ¼ tsp salt 2 tbsp coconut oil or unsalted butter, melted 1 large egg room temperature 1 tsp vanilla extract ¼ cup pure maple syrup 1/4 cup almond milk ¾ cup freshly grated carrot Add ins 1/2 cup chopped walnuts 1/4 cup reduced sugar craisins 1/4 cup pumpkin seeds Preheat oven to 350. Mix wet and dry ingredients separately and then add wet ingredients to the dry. Mix in your add ins. Coat your pan or use parchment paper and cook for about 10-15 minutes depending on the size of the cookie. Makes 6 large or 12 small. See Less
