You’ll need: 3 cups chicken broth 1 cup wild rice blend 1/2 tsp dried parsley 1/2 tsp dried oregano 1/2 tsp dried thyme 1 tablespoon olive oil 1 cup sweet potato diced small 1/4 cup chopped onion 1/3 cup reduced sugar craisins 1/3 cup pecans chopped Option to add in your leftover turkey, 1-2 cups Cook your sweet potato in the microwave for approximately 2 minutes to soften slightly. Bring broth to a boil and add wild rice. Cover and simmer for about 45 minutes. While rice is cooking, pour olive oil in a skillet and sauté onion and sweet potato until tender. Add craisins, pecans, and turkey, and cook until heated through. Add rice, combine and serve.
